Ingredients
- 1 pound red potatoes, washed and diced
- 1 cup green beans, trimmed and halved
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Optional: grated Parmesan cheese for serving
Directions
Step 1
Preheat grill to medium/high heat - or oven to 400 degrees, but we suggest a Fuego Grill ;)
Step 2
- Tear off four sheets of aluminum foil, each about 12x12 inches in size.
- Place an equal amount of diced red potatoes and halved green beans in the center of each foil sheet.
Step 3
- In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.
- Drizzle the garlic and herb mixture over the red potatoes and green beans in each foil packet.
Step 4
- Fold up the sides of the foil around the ingredients to create a packet, leaving a little room for steam to circulate inside.
- Seal the packets tightly, ensuring there are no gaps for steam to escape.
Step 5
- Place the foil packets on the grill grates or on a baking sheet in the oven.
- Grill: Cook for about 20-25 minutes, flipping the packets halfway through, until the potatoes are tender. Cooking time may vary depending on your grill's temperature.
- Oven: Bake for about 25 minutes or until the potatoes are tender.
Step 6
- Carefully open the foil packets, being cautious of the steam.
- Transfer the cooked potatoes, green beans, and garlic to serving plates.
- If desired, sprinkle with grated Parmesan cheese for extra flavor.

Serve the foil packets as a delicious and flavorful side dish alongside grilled meats, chicken, or your favorite main course.
