Ingredients
- 1 ripe pineapple, peeled, cored, and sliced into rings
- 2 ounces light rum
- 1 ounce pineapple juice
- 1/2 ounce lime juice
- Vanilla ice cream
- Pineapple wedge and/or cherry for garnish (optional)
Instructions
- Preheat your grill to medium-high heat.
- Place the pineapple rings directly on the grill and cook for 2-3 minutes on each side, or until grill marks appear and the pineapple caramelizes slightly.
- Remove the grilled pineapple from the grill and let it cool for a few minutes.
- Place a scoop of vanilla ice cream into a chilled martini glass.
- Arrange the grilled pineapple rings around the ice cream.
- In a small pitcher or measuring cup, mix together the light rum, pineapple juice, and lime juice.
- Pour the rum mixture over the ice cream and grilled pineapple in the glass.
- Garnish with a grilled pineapple wedge and/or a cherry if desired.
- Serve immediately and enjoy the tropical flavors with a touch of rum and creamy vanilla ice cream!
