Choosing the Right Steak
Different cuts of steak offer unique flavors and textures, so picking the right one depends on your preference and the occasion.
1. Ribeye – Rich & Juicy
Best For: Flavor lovers and indulgent gatherings
Why It’s Great: Ribeye is marbled with fat, making it incredibly juicy and flavorful.
How to Grill: Cook over high heat for a beautiful sear, then finish over indirect heat to render the fat and keep it tender.
2. New York Strip – Bold & Beefy
Best For: Classic steakhouse experience
Why It’s Great: A firm texture with a good balance of marbling and meatiness.
How to Grill: Sear over high heat for a few minutes on each side, then move to medium heat to finish cooking.
3. Filet Mignon – Tender & Elegant
Best For: Special occasions and refined palates
Why It’s Great: The most tender cut, with a mild, buttery flavor.
How to Grill: Since it has less fat, wrap in bacon for extra flavor and grill over medium heat to keep it from drying out.
4. T-Bone & Porterhouse – The Best of Both Worlds
Best For: Feeding a crowd
Why It’s Great: These cuts feature both a tender filet and a meaty strip on one bone.
How to Grill: Cook over high heat first to get a good crust, then finish over medium heat, flipping occasionally.
5. Flank & Skirt Steak – Great for Marinades
Best For: Tacos, fajitas, and casual get-togethers
Why It’s Great: These thinner cuts soak up marinades well and cook quickly.
How to Grill: Grill over high heat for just a couple of minutes per side, then slice thinly against the grain for maximum tenderness.
How to Grill the Perfect Steak

Now that you’ve chosen your steak, it’s time to fire up the grill and cook it to perfection.
1. Prep Your Steak
Let your steak sit at room temperature for about 30 minutes before grilling.
Pat it dry with a paper towel and season generously with salt and pepper (or your favorite steak rub).
2. Get the Grill Hot
Preheat your Fuego Grill to at least 450-500°F to get a perfect sear.
For charcoal grills, make sure the coals are white-hot before cooking.
3. Sear and Cook to Temperature
Sear steaks over high heat for 2-3 minutes per side to develop a crust.
