Inspired by American barbecue and grilling traditions
Ingredients
For the Chicken:
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
For the Veggies:
- 2 bell peppers (assorted colors), cut into chunks
- 1 large red onion, cut into chunks
- 2 medium zucchinis, sliced
- 8-10 button mushrooms, cleaned and halved
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
Prepare the Chicken
- In a small bowl, mix together the salt, black pepper, paprika, garlic powder, and onion powder to create a spice rub.
- Pat the chicken dry with paper towels. Rub the spice mixture all over the chicken, including inside the cavity. Drizzle olive oil over the chicken and rub it in as well. Let the chicken sit at room temperature while you prepare the grill.
Prepare the Grill
If you're using a gas grill, preheat it to medium-high heat. If you're using a charcoal grill, light the charcoal and let it burn until the coals are covered with white ash. Bank the coals to one side to create a two-zone fire (direct heat and indirect heat).
Attach the Chicken to the Rotisserie
Follow the manufacturer's instructions for your grill's rotisserie attachment. Slide the chicken onto the rotisserie rod and secure it in place. Make sure the chicken is centered and balanced on the rod.
Cook the Chicken
- Place the rotisserie rod with the chicken on the grill over the indirect heat zone. Close the lid and let the chicken cook for about 1 to 1.5 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh, and the juices run clear.
- Monitor the grill temperature and adjust the burner settings as needed to maintain a consistent temperature.
Prepare the Veggies
While the chicken is cooking, toss the bell peppers, red onion, zucchinis, and mushrooms with olive oil, salt, and pepper in a large bowl.
Grill the Veggies
About 20-30 minutes before the chicken is done, place the prepared veggies on a grill basket or skewers. Grill the veggies over direct heat for about 10-15 minutes, turning occasionally, until they are charred and tender.
Serve
- Once the chicken is fully cooked, carefully remove it from the rotisserie rod and let it rest for a few minutes before carving.
- Serve the rotisserie chicken & veggies for a delicious and flavorful meal.
