Ingredients
For the Chicken:
- 1 pound boneless, skinless chicken breasts
- Salt and pepper to taste
- Olive oil for cooking
For the Pesto:
- 2 cups fresh basil leaves, packed
- 1/2 cup grated Parmesan cheese
- 1/2 cup pine nuts or walnuts
- 2-3 cloves garlic, minced
- 1/2 cup extra-virgin olive oil
- Salt and pepper to taste
For Assembling:
- Slider buns or mini rolls
- Fresh mozzarella cheese, sliced
- Tomato slices
- Fresh basil leaves
Directions
Step 1: Prepare the Pesto
- In a food processor, combine the basil, grated Parmesan cheese, pine nuts or walnuts, minced garlic, salt, and pepper.
- Pulse the mixture while slowly drizzling in the olive oil until a smooth pesto sauce forms. Adjust seasoning to taste.
Step 2: Cook the Chicken
- Season the chicken breasts with salt and pepper on both sides.
- Heat a skillet or grill pan over medium-high heat and add a drizzle of olive oil.
- Cook the chicken breasts for about 5-6 minutes per side, or until fully cooked and no longer pink in the center.
- Once cooked, let the chicken rest for a few minutes before slicing into smaller pieces.
Step 3: Assemble the Sliders
- Slice the slider buns or mini rolls in half horizontally.
- Spread a generous amount of pesto on the bottom half of each bun.
- Place a slice of mozzarella cheese on top of the pesto.
- Add a few slices of cooked chicken on top of the cheese.
- Top with tomato slices and fresh basil leaves.
- Place the top half of the bun on the ingredients to complete the slider.

- You can secure each slider with a toothpick if desired.
